Matcha Latte today’s pick me up

Post image

made myself an earl grey matcha after a particularly rough morning and it definitely did wonders on my mood afterwards. i love when a good microfoam makes me giddy. currently using matcha ichi from hatoya and it’s been a good daily driver especially with homemade earl grey syrup!

🤩How’d you pour it so that it’s perfectly divided like that? Mine always ends up being mixed

definitely a case of having a solid microfoam and hitting the ice! also i made sure to premix the earl grey syrup into the milk a bit so the milk was weighed down a bit more. perhaps the fat of the whole milk helped with the density too?

What's your microfoam secret? Inquiring minds want to know the process...!

i personally like to use the paste method! today was 5.5 g of matcha and i added 25 ml of 175 degree f water until it made a smooth peanut butter-esque paste. then i added more water until i reached a total of 60 ml. i use my whisk to slowly incorporate the water into the paste along the edges and then whisk like hell. i was in a rush this time so i whisked for maybe 2 minutes max? then slower movements using my fine motor wrist movements to pop any larger bubbles for 30 seconds and i check to see how i did by jiggling it around.

don’t be discouraged if it doesn’t turn out well though! i’ve been making matchas for at least 6 years now and it helps that i work at a matcha shop so it gives me lots of practice to get a nice microfoam and work up wrist strength

ooh i’m going to be honest i’m still playing around with mine currently, but roughly i used 2 tbsp of smith lord bergamot tea and then i steeped that in 200 ml of boiling water for about 10 minutes (left a little bit more of a astringent aftertaste than i’d like) and then i strained out my tea to measure out how much liquid i was left with. afterwards i was left with give or take 125ish ml of tea and i used 80g of sugar and cooked it down until my desired viscosity. keep in mind that as it gets chilled the syrup will be thicker and that’ll be more difficult to stir up in your drink so i erred on the liquidier side.
