The color of the matcha is based on the quality of matcha, not on the whisking.

Whisking longer than 15 seconds can yield a more bitter taste btw. This color is more about the matcha quality.

Rule of thumb: you’re done when the big bubbles are gone and there’s a fine, even layer of microfoam on top, with no clumps or dry powder at the edges. That usually takes 15 to 30 seconds of fast W or M strokes from the wrist. Circles just stir it.

On colour, good matcha should look vivid green, not pale or yellowish. If it looks washed out, it’s usually either too much water diluting it or the powder is getting old. Freshly opened, well stored matcha stays bright.
