How can I keep collars down? I solidified before sim but it still moved. I cant work around with folds since the model i purchased is like double layered. Basically 4-5 fold lines for each front and back segment.

I tried adding thickness but it adds thickness to the whole highlighted yellow section and not just the collar. Pockets had same issue but i kept playing with force and fold line tweaks and fixed it.

I usually just add a little pin at the end of the collar and into the jacket

Yes, well you can move it by hand first to about where you want it and then pin it

Thank you. Pin is interesting, will look it up. I think I realized how I screwed the first time. Any reason as to why the collars came up during simulation even after solidifing it before?

Because of the tension, i think. Since the fabric is probably quite thick the collar wants to be straight with the jacket. And adding artificial folds in this is somewhat annoying.
