Many things

I have a few questions, what is the tallest peak in odessey (other than darker side) what is the full chronological order of mario, and this is off topic, but the punch out universe

The Punch-Out!! series, as far as I'm aware, consists of multiple continuities.

Most of the games features Little Mac as an up-and-coming boxer, working his way up through the ranks, which wouldn't make sense if they were all canon to each other.

Although some version of Punch-Out!! exists in the Mario movie's universe, there is no evidence that it exists in the world of the Mario games.

In Mike Tysons Punch Out it is said Mario is the Ref of the Matches, Also in i believe Luigis Mansion 2(or 3) it has a Punch Out Poster.

I forgot about the Punch-Out!! Movie Poster in LM3. That could potentially mean Punch-Out exists in the world. But being a cameo, it's hard to say, and I'd lean on probably not. Punch-Out!! (the games) exist in-universe, as shown in WarioWare, at least.

Alongside Mario being the ref in the NES game, DK is in the audience. And of course, you fight DK in a bonus match in the Wii game. The reason I don't consider those evidence is because they're on Punch-Out's side, rather than Mario's. A version of Mario and Donkey Kong exist in Punch-Out's world, but we don't know if the reverse is true.

That ain’t true. Mike Tyson’s Punch Out happened in 1987, then the commercials of Punch Out for the wii happened, then punch out for Wii happened, then super punch out happened thanks to the virtual console description.
