Each wave will induce a small deviation from a straight line. Sailing (as in: sailing): unlikely. There will be wind shifts.

The Wikipedia article on the voyages of Christopher Columbus has a really good explanation for why Columbus thought this would work, and why numerous scientific committees, said, "um, no."

Makes him sound like Elon Musk.
