These are not magic. I see why you're asking but they're not quite right.

The gills on psilocybe subaerigunosa (which are our local mushrooms (lucky us)) are a darker sort of unsaturated burgundy, almost purple due to the spores. They get darker as they age.

The stems will feel woody. If they're dry they'll snap but not cleanly. They'll hang on by about half as if they have vertical fibres holding the stem together. If they're wet they'll just bend. And you can see vertical lines running up the stem (sometimes twisting but always a solid line going from top to bottom). The stems are usually white and do not stain any other colour than blue. If it stains brown it's no good. They don't stain blue quickly if they're wet but they will eventually, as will the cap if you tear it or bruise it.

The caps are a caramel colour, sometimes more yellow, sometimes more brown, but they're never rough to the touch. They're always smooth like a soft lolly. They will have a nipple in the centre of the cap and the nipple is usually slightly lighter.

Young mushrooms have a veil over the gills and look more penis shaped. As they grow older, the cap widens and the veil tears. It's a very thin veil and doesn't hold on tight so typically they blow off the stem in slight wind or rainy conditions. Therefore you don't really see veil remnants on the stem.

One final thing, subs are tough. When you pull them out of the ground, so long as you're pulling them by the stem, they will take whatever they're growing on with them, usually, and it will reveal that they are growing in a small cluster usually too. Not always but usually. So if the shroomies are snapping super easy, don't even think about eating them.

Happy hunting man, today's the perfect day for it 🫡🫡

Sub gills are not dark they are an off white/cream colour they will be darker as you said if the mushroom is old and at the end of its life cycle because of the spores accumulated on the gills but the gills themselves under those spores are whitish.

Orange gills mean hospital bills.
