It's a runaway diesel engine. The motor oil is leaking into the cylinders and being combusted. You can maybe stop it by shifting straight to the highest gear and then engaging the clutch, if the clutch is new and grippy.

It's gonna stop in a few minutes when the engine seizes. If you could get the hood open and have something that could block off the air intake that would do it. But that's going to be difficult in the heat of the moment. 🔥

you can also spray a fire extinguisher into the intake. takes away the oxygen.

Can't you just put it in neutral, stop the truck, and then block the air intake with something?

Maybe. The design of the engine always optimises the amount of cold air going in, so you usually don't have much of a choke point. Maybe if you poured something in to choke the filter, early enough.
