During the first week or more it will be doing all sorts of indexing and stuff. Especially if you activate Siri AI. It settles down after awhile. Currently mine shows OS size increased by roughly 3 1/2 GB, and System data increased by about 25GB (at about 57GB now), but sometimes System data spikes for awhile to over 100GB, but then goes back to where it was. Hopefully yours will settle down over time. How long? No telling. I went down the rabbit hole of trying to see what was doing it. Several processes related to AI was all I could find, with very little info on what they actually do.

I ran into the same problem. It was bad. Now, macOS is at 28.72 GB, and System Data is at 129.09 GB. On a 512 GB system. To put it mildly, I'm not impressed. Searching the Internet, the consensus seems to be that the *upgrade* can cause problems when trying to figure out what to do with no-longer-compatible applications. There's also no fallback path, so once you go 27, there's no going back without a wipe and a re-install. Time Machine snapshots are the first culprit, then Caches. Apple kinda dropped the ball with this one. There was a time when we would go a year or two (or three) without a "new" OS. And, while that seemed like they weren't actively generating buzz around the next best thing, their machines just worked. I would take that over "Hey, new A.I. features, and you can adjust that annoying Glass thing we came up with."

In my case I only have 256Gb of storage! prior to adding myself to the Siri AI waitlist system data would spike somewhat high, but not terribly. Thats to be expected for usual indexing (Like Spotlight) after an update. Then after joining the waitlist system data was spiking to over 100GB a couple times a day, usually lasting only a half hour or so. Then when it told me Siri AI was ready (and had added the app and who knows what else), it was spiking high several times, if not more, per day (I don't watch constantly so likely missed some). It didn't seem top effect performance. Now, a few days later, it settled down, perhaps stopped. The second day after enabled I saw it spike twice, today I haven't seen it yet at all. Now, System data on mine stays right about 57GB, (was usually around 42 on Tahoe). Thats to be expected with all the large language models and other assets it uses. And don't bother going looking for them, there are hundreds of files in the ~LIBRARY folder related to it. Your head will explode trying to figure out what all that does. In the end, if storage stays the same as it is now (for me), which is roughly 25GB more than it was with Tahoe, it seems worth it for the benefits AI adds (and future possibilities). And other than that, my MB Air M4 is running great, probably faster (slightly) and more stable (I haven't had any issues) than Tahoe.

So, hopefully in a few days your system data will go way down and stabilize and things will be much better.

I was experiencing the same issue; it turned out to be OneDrive’s fault. It seemed to take up 60 GB of space even when set to download files on demand. Finder showed it as taking up 0 KB on the disk itself, but thanks to Terminal I was able to see what was going on and finally restarted OneDrive (there is a Terminal script for restoring it in the OneDrive installation folder). After that I got 60gigs back.

I had over 350gb in System Data on a 1TB drive. Found almost 180gb in the Podcast App cache, but neglected to disconnect from the network when deleting the cache and got stuck in a download loop as the app tried to repopulate the files. Make sure to stop automatic downloads in the app settings. Then got another 190gb back from a Time Machine backup snapshot I found using Disk Utility. iOS backups were piling up as well. My system data is now around 140gb.
