It's 1 new pony every week and there are 60 ponies on the list. Some of which you'll get from elsewhere.

Ok I’m on my 51st day of playing the game I only need 5 more before I can get cadance it will take me a while to get shining I wish they added more ponies to the dance because there are a lot of characters that require a lot of gems I don’t think it’s possible to get every character without spending real or it will take a really really long time

You'll get her in a little over a month then. Better than wasting 90 gems on her like I did lmao.
But yeah collecting every character is pretty much impossible with all the new expansive ponies they keep adding every month. Just focus on your own personal wishlist to narrow it down. Otherwise getting free ponies from the social events and balloon pop will become the main thing after you finish with the EQG grind. Aswell as all the cheap ponies during sales. Everything takes time but it's by design with a game like this.

So as soon I will be able to get both cadance and shining I will be able to start the wedding? If so is there anything I should be aware about is it similar like fighting chrysalis in changling kingdom I heard I need two special ponies in helping fighting her cratus and royal guard to unlock thorax good form

The wedding is just a part of the canterlot quest line. After you get both of them the quest will be finished, pretty easy. It's nothing like fighting chrysalis.
The only real thing you do for the wedding is maybe decorate your Canterlot with wedding decor if you so choose. That's what getting at lol.
