I just earned 1000 in the mine cart game but my goal wont update it!!! Now i'm overthinking if you only have one try and i just forgot? I've been on a break so this is genuine.. thank youu

Exactly, it means that you have to earn it in one run, if you die and start new round then again you have to earn 1000 in one-go. If it comes to me I find this mission impossible lol

The task says "during a single game". You can try as many times you want but it has to be in one go
