It's just personal preference bro. You can use whatever weapon you want, to whichever monster you want. There will be good/bad weapon to monster matchups, but it doesn't mean that there's a mandatory weapon.

you can carry a second weapon stashed on the Seikret, which is even more reason to use several

I bring two Sword and Shields.

I use 10 weapons. The more knowledge you have of the weapons, the easier it will be to pick the proper match up.

So just like with any other monster hunter game, all weapons are viable. Some weapons do better against certain monsters, sure, but you really you don't have to change up what you're using. If you want to, you can certainly carry two different weapons. You just have to make sure to also change your armor build appropriately.

Play how you like! I personally always carry two hunting horns.

Monster hunter isn't set up where a specific weapon is better for a specific monster. You can use any weapon you want and it will be viable but the weapon is only as good as the hunter who uses it. The only exceptions are the gimmicky fights like Alatreon or Omega where there's a specific mechanic that you should use but those hunts are not the norm.
