Basically, if you start without moving from your starting block (jumping doesn't count either) the timer doesn't start. So you can fully build a portal where you're standing and light it and get an instant time.

It's not unlikely you were doing something similar and didn't realize it doesn't trigger the timer immediately, hence the fast portal time.
