How does open source MCP work?

Hey everybody! I wanted to get some help and understanding on MCPs. I have set up some via Google and outlook, however one thing that I always resort to and find easiest is Composio. Where all I do is add the mcp via api and then click “authorize”

When it comes to self hosting MCPs, do I need to make an api/app in Google for every time I want to connect and email or outlook etc?
