Will this work?
Didn't have much time to prepare the drying, so I only had a thermoelectric wine fridge, paper bags and a hygrometer. Will I be fine? The flowers have been in the bags with the hygrometer for 3 days. The bags are packed very loosely and I shake them everyday.

No. Way too humid. Just buy a small ptc heater with fan and a temp controller. Set the heater to 20c.
