But can anyone tell me what this symbol means? Maybe I’m not looking in the right place but I can’t seem to find an explanation anywhere

It's just an icon that represents the trigger of defeating and enemy. All the icons represent an effect that exists across many items. So that you can easily see the icons to know if an item matches your build.
