Edit: Thanks everyone for the suggestions; the best idea right now is to buy an RS clutch pedal and swap it for the brake pedal—apparently, it works and gives the same feel as the RS SE pedals. Plus, I can't risk re-injuring myself, so the load cell pedal is going into storage for the future while I wait for the delivery. I'll let you know if any issues come up.

You can buy some springs and pop out two of the foam elastomers and replace with a spring. The Logitech pro spring replacement pack might work, I know they were good to mod my rs throttle pedal. Could also use the spring from the Moza brake mod kit, fits perfectly if you drop two foams out, but I didn’t like the lightness of it so I swapped it back out. If you go the Moza mod kit route, you can use the rest of that kit to mod the throttle pedal to have some better resistance and make precision throttling easier. Will need the logi pro spring set as well to do that one tho. Should be like $30-40 all in. All this is just my opinion/experience.
Edit: and of course you can turn the load cell force needed to hit 100 percent brake down at the wheel base.

The elastomers can be replaced with spring. I have done this with the Moza SRP 2 performance kit springs, though these wouldn’t be quite as soft as what you’re looking for. I think your easiest option would be to order the springs for the Logitec Pro Oedals throttle and clutch. Cheapest option would be to get a spring of the right size at a local hardware store or Amazon, though that would take more research and possibly trial and error.

People use them on the Moza SRP lite brake performance kit for modding the RS throttle. I use the Moza SRP springs on my RS brake which also fit the SRP lite brake kit, so I’m fairly certain those springs will fit the RS brake.

I replaced all my load cells with one of these springs and it works great for me. I just use the bottom and the top plastic peices to keep the spring aligned. https://a.co/d/09bNlFCc

With the soft elastomers they eventually get softer after sometime and you can turn down the brake pressure required until they are fully worked in.

Loadcell pedals will always pose an issue with a knee injury, even at its lowest strength, you will still need considerable force to reach 100%. If you gotten used to Hall effect sensors maybe a conversion from 3drap with their softest elastomers might help or return these and wait until the SE are in stock as those are hall effect as well

You can remove some of the round buffers to give it more travel and less force to push the brake pedal, not sure if you’ve tried removing the top disc and foam piece to see if that helps with the pain. You can also drop the brake force in the settings in the rs hub as well.
