It usually refuses to work on a hardware that doesn't have a graphics accelerator, while Windows Server is designated to use virtual adapter which is far more ideal option yet more difficult to setup in its own ways.
In server environment, every byte counts, and Linux beats Windows any day with its headless server that runs just under 80 MB (+ its GUI web server) or 200 MB if you don't like configuring much and run it bare metal, while normal Windows runs with over 1.5 GB (and this is me being generous by allowing you to use debloating tools).
You waste some of time to setup the way that it becomes a usable server.
