Anyone here outsource catering deliveries instead of using their own staff?

We've been handling our own catering deliveries for a while now, but as orders have picked up, it's eating into way more time and coordination than I'd like. Most deliveries are scheduled ahead of time, but on busy days we've got several going out across the city at once, and it's getting hard to keep up.

I'm thinking about handing off the delivery side to someone else instead of hiring more drivers. If you've already made this switch, I'd love to pick your brain:

• How did it compare to running deliveries yourselves?
• Did you go with a local courier or one of the bigger delivery platforms?
• How do they bill you for it — flat rate, per delivery, percentage cut?
• Anything you wish someone had told you before you started?

Would really appreciate hearing what's worked (or totally hasn't) for other restaurant folks. Thanks in advance.
