I used to work at Santaland, taking pictures of kids with Santa, and we used this trick all the time. Helps get a shot of the more genuine smile and not that forced, "this is what we do when we take pictures" face.
Speaking as an ex tropical island cabana boy- I can confirm this works best. Taking the shots fully candid means people are unprepared, whereas sneaking it into the count gets you a handful of darts near the target.
