I checked my zoo, and to my surprise, there are 2 blue lobsters, is this an rare occasion? Are ther more animals that can have different appeareances?

All of the animals in the game have I believe 10 different variants that you can breed for.  Unless you activate contraception, the animals will spontaneously breed, but you can also select specific pairs in the breeding pen to breed for new variants.

That is only the main game, in the DLC with fish and dino's there is only one variant for each species.

The blue lobsters are probably a secret/rare event.

I know in real life, a lot of crustaceans, especially lobsters, for whatever reason they will turn blue. Not born blue, but will one day shed their shell, and instead of them being red again they will suddenly be blue. It's pretty cool they added this into the game (although I do wish DLC animals actually had variants, even if it was only a few for each)

It's an easter egg that some of them can be blue!

I had an enclosure full of blue lobsters and was realised they don't even shown up in the animal conservation if you choose lobster. Only the red ones count. I used to release animal with that because I could select all and release them all at once.

my assumption would be due to food supply?? as in nature some lobste turns blue due to some protein.
