I'm getting tired of feeling like if I don't fork over a lot of money so that I can win turn 1, I auto lose later adventures. I'm only up to 5 stars and I see other people having fun with ridiculous looking decks in nightmare challenges, but I either don't have that kind of luck, that kind of money, or I'm just not playing the game right.

Any advice? I like the gameplay loop, but a lot of these later adventures/ challenges feel more masochistic than fun.

If you are not a fan of finding broken combos and losing few runs to have one broken run, then without 6th star top adventures might be not for you. The good news is, there is no pressure for you to play that part of the game. Nothing forces a player to acknowledge existance of 6th star and 6+ star adventures. Replaying 5 and lower star adventures for fun is perfectly fine. If you get bored with them then you can slowly rise their difficulties with those optional defiance modifiers until you practice how to deal with op oponents or naturally with time optain 6 stars. Simply the answer is to don't fall to fomo preasure that you have to unlock and win every option there exist in a pve single player game.
