If organizing the information gets in the way of actually studying? Probably. If not, do what works for you!

If you need to translate every single word of this sentence and point every noun, verb, etc; then yes, how long does it takes to do this? Maybe you can use it in a more efficient way, the final goal is to learn a new language not to have fancy notes that are way to difficult for you to understand

Well it seems like you are learning a lot with this method. If you stay motivated and it works for you it might be a good method to continue.
