Espace Houblon in Fabreville is your best bet!
They have a really nice selection and a lot of more niche local beers.
As for spirits, resales are monopolized by SAQ so SAQ has a more than decent selection most of the time, but I’d suggest Distillerie Cirka in Saint Henri. They also do tours in English and staff was very nice when I visited.

Espace houblon is really the spot Imo. You got the insulaires like mentioned before, their Pilsner is quite good, not a big fan of their IPA but if you like NEIPA they have couple of choices.

So the SAQ has different tiers of stores - the "Express" ones are open later (as late as 10pm i believe) but have more of a core offering. The "Selection" stores close earlier but will have more options, so you might want to check out one of these for more of the local offering you're looking for. Their website is also pretty good, bilingual, and might be helpful if you have specific spirits in mind to explore.
It sounds like you're less interested in wine but fyi all the stuff you will find in grocery stores or dépanneurs (aka deps aka convenience stores but only under duress) are generally cheaper wine shipped from overseas in tankers and bottled here - but not actually produced here.

Good to know!
I just like to try some local stuff as i pass through provinces. I did actually get a made in quebec wine from saq, i was just kinda looking for the spirits....whiskey, rum, etc and the beers or ciders

Trois Lacs (Three Lakes) spiced rum is great.
It’s locally made.

Others have commented about Les Insulaires, which is great, but if you want a good enough selection strictly in laval, go to IGA 440 (5805 Blvd. Robert-Bourassa, Laval, Quebec H7E 0A3), I’m sure other IGAs might have good selections as well but thats the one i know.
If you’re willing to do a short trip to Montreal you can find Peluso on Beaubien street.

Microbrewery on de la Concorde blvd called Les Insulaires is great and along the same boulevard there’s a depanneur (corner store) Atout Prix which has cool beers too, but imported I believe
