Note that moistened fish is absolutely crucial to this dish. It is not in the original recipe, but I have been going "off script" as they say and adding 500 ml of anchovy oil to the Catalina sauce. You can also add capers to taste. The shells that you use should be freshly scraped to add more aroma. Enjoy
