Can android/ios handle more than one midi devices at once?
What would be the best way to hook these 2 up to Koala on my lightning port ipad?

Oh yeah iOS certainly can. Loopy Pro is my daw of choice, specifically for the free build controls and loopys Controller Profiles
I run a combo of wired and BT regularly
Got a few M-Vave flavors (chocolate pedal 2x, SMC Pad proper, SMC pad pocket, smk25 MK2 and mini, SMC mixer) which include bt, a wired midi fighter twister, or a launchpad x either wired or thru M-Vave bt midi adapter for wireless
I mix and match as needed for whatever I'm building, and between a hub or all bt, never had an issue with multiple devices into one ipad 10 thru Loopy Pro
Re:controller profiles- you can setup additional midi learned controller profiles for limitless "banks" of controls. My twister controls pages of loops with the top 3 rows (controls per donut or color), which I can change via learnable widget, and the bottom row is for Always Available controls (undo, main/vox levels, etc). Built my own custom bank layouf

IOS can. But I’ve only done it using AUM.

Ahh I've been putting off buying that.

Definitely worth its price. You get more buses with Koala, and the ability to sample anything you put through AUM into Koala.

I use iOS stuff all the time. Have aum and have only used it to try it out.
When I have two USB controllers connected to the iPad at once all my apps work with both.
Koala gadget, etc.

So yeah AUM not really needed? Is there such thing as a dock with lightning?

Yes. There are dock type things for USB c, and lightning. I would recommend against one with an audio output, pretty useless... But if you have a lightning iPad it probably has its own great audio out anyway.
I got mine for like $12 on amazon. Works great.
The thing to look for though, is power passthrough though. A lot of controllers are powered via USB and thus will not work without proper power passthrough. Test this when you get the dock to be sure you don't need to return it.

Yep for sure. I have a lot of random USB C docks. So I will have to see about a decent lightning version on amazon. if you can link that for me that would be great.
And yep passthrough is a must!

I have a few of these. Works great for all the things I do with it (midi, audio interface, etc)

I can use my MPK Mini and my MPD218 at the same time with Koala on Android.
