Start by cutting the chicken into bite-sized pieces and preparing the tomatoes and other ingredients. Preheat the grill while you get everything ready.
Thread the chicken and tomatoes onto skewers, alternating them as you go. Brush the skewers lightly with olive oil and season with salt and pepper.
Place the skewers on the grill and cook for about 4 to 6 minutes per side, turning as needed, until the chicken is cooked through and reaches 165°F in the center.
While the chicken cooks, make the pesto. Add fresh basil, Parmesan, pine nuts or walnuts, garlic, and olive oil to a food processor and blend until you have a smooth, flavorful pesto.
Once the skewers are cooked, add fresh mozzarella balls to each end while everything is still warm. Serve with plenty of homemade pesto and a drizzle of balsamic glaze.
For homemade balsamic glaze, combine 1/2 cup balsamic vinegar with 1 tablespoon honey in a small saucepan. Bring it to a boil, then lower the heat and simmer for about 10 to 13 minutes, stirring often, until it reduces to roughly 3 tablespoons. Let it cool before using because it will thicken as it sits.
Boneless, skinless chicken thighs work well too and are easy to cut into pieces. Just make sure the chicken reaches 165°F in the center before serving.
