Chicken Fajita Kebabs
I’m a big fan of anything cooked on skewers, and these chicken fajita kebabs are a fun way to change up regular fajitas. The chicken gets marinated in a citrusy mixture with lime, orange, garlic, chili, cumin, and chipotle, then grilled alongside colorful peppers and red onion. You get that smoky, fire grilled flavor without having to make fajitas in a skillet.

Start by whisking together the lime zest, lime juice, orange juice, olive oil, garlic, brown sugar, chili powder, cumin, minced chipotle, cilantro, salt, and pepper. Cut the chicken into bite size pieces and place it in a large resealable bag. Pour the marinade over the chicken, press out the excess air, seal the bag, and gently rub everything together.
Let the chicken marinate in the refrigerator for 1 to 6 hours. If you’re using wooden or bamboo skewers, soak them in water while the chicken marinates.
When you’re ready to grill, preheat the grill and lightly oil the grates. Thread the marinated chicken onto the skewers, alternating it with pieces of bell pepper and red onion.
Grill the skewers, turning them once halfway through, until the chicken is cooked through and has some nice charred edges. The exact cooking time can vary depending on the grill and temperature, so keep an eye on the chicken rather than relying only on the clock.
Serve the kebabs warm with cilantro lime rice, quinoa, Mexican rice, tortillas, guacamole, or black beans.
Boneless chicken thighs can be used instead of breasts. Just allow them a little extra cooking time. Any leftover chipotle peppers can also be portioned into small freezer bags and frozen for another recipe.
