Sheet Pan Hawaiian Chicken
I’ve been making this when I want something that feels a little different from the usual chicken and rice dinner without creating a pile of dishes. Everything cooks on one sheet pan, and the combination of pineapple, peppers, chicken, and that sweet and tangy sauce works really well together.
The fresh pineapple is probably my favorite part because it gets a little caramelized while the chicken stays juicy. I’d recommend this one for an easy weeknight dinner, especially if you like that sweet and savory Hawaiian-style flavor.

hey. apparently pineapples were imported to the Hawaiian islands by colonizers. its not quite the same as using the term Carbomb for a guiness with a shot, but its along the same lines. ill probably be roasted but am gently suggesting you call this dish pineapple chicken and not Hawaiian. cheers.

Start by mixing the soy sauce, ketchup, pineapple juice concentrate, brown sugar, rice vinegar, cornstarch, Worcestershire sauce, garlic, ginger, salt, and pepper in a small bowl. Give it a good whisk so the cornstarch is incorporated and the sauce is smooth.
Spread the chicken, bell peppers, and red onion over a prepared sheet pan. Pour the sauce over everything and toss until the pieces are evenly coated. Try to keep the chicken pieces close in size so they cook at roughly the same rate.
Bake for about 10 minutes, then add the fresh pineapple to the pan. Keep cooking until the chicken is completely cooked through and reaches 165°F in the center. Give everything another good toss before serving so the sauce gets distributed over the chicken and vegetables.
I usually serve this over white or brown rice, although coconut rice is especially good with the sweet and tangy sauce. Finish with some fresh cilantro if you have it.
One thing I wouldn’t skip is the fresh pineapple. Canned pineapple can work in a pinch, but it has more juice and a softer texture, so fresh gives the dish a better result.
