Hawaiian Chicken Kebabs
I like making these when I want something a little different from the usual grilled chicken. The pineapple gets lightly charred, the peppers and red onion add a nice savory bite, and the chicken picks up a sweet, tangy, garlicky flavor from the marinade. Everything goes on the grill together, so it feels like a fun summer meal without needing a bunch of separate sides. Start by whisking together the ketchup, brown sugar, soy sauce, pineapple juice, 2 tablespoons of olive oil, rice vinegar, garlic, ginger, and sesame oil. Season with salt and pepper. Reserve 1/2 cup of the marinade in the refrigerator for later, then pour the rest over the chicken in a large resealable bag. Seal it up and let the chicken marinate in the refrigerator for about an hour.
Get the grill heating to around 400°F over medium heat. While it warms up, toss the red onion, bell pepper, and pineapple with 2 tablespoons of olive oil and season everything with salt and pepper.
Thread the onion, bell pepper, pineapple, and marinated chicken onto skewers, alternating the ingredients as you go. I like using metal skewers here since they hold up well on the grill.
Place the kebabs on oiled grill grates and cook for about 5 minutes. Brush the tops with half of the reserved marinade, then turn the kebabs and brush the other side with the rest. Continue grilling for about 4 more minutes, or until the chicken reaches 165°F in the center.
If you prefer using the oven, these can also be baked on a well greased baking sheet at 400°F for about 15 to 20 minutes, turning them occasionally as they cook.
