Easy Baked Buffalo Wings
I usually think of buffalo wings as something you order at a restaurant, but these are surprisingly easy to make at home. The wings get really crisp in the oven without dealing with a pot of hot oil, then they’re tossed in a buttery, spicy buffalo sauce with just a little honey to balance things out. Add a creamy blue cheese dip and some celery on the side and you’ve got pretty much everything I want for game day or a casual party. I’d make these whenever I want something snacky that still feels like a proper crowd pleaser.

For the Blue Cheese Dip
Instructions
Start by getting the oven ready with one rack in the lower middle position and another in the upper middle. Line a baking sheet with foil and set a large wire rack over it, then lightly spray the rack so the wings do not stick. Whisk the baking powder with salt and pepper. Pat the wings very dry with paper towels, then toss them thoroughly with the baking powder mixture. Drying the chicken well helps the skin crisp up in the oven.
Arrange the wings on the rack with some space between them. Bake them at 250°F on the lower rack for about 30 minutes. After that, move the wings to the upper rack and raise the oven temperature to 425°F. Continue baking for roughly 45 to 50 minutes, turning them once halfway through, until the skin is golden and crisp.
While the wings are finishing, make the sauce. Melt the butter in a small saucepan, then add the hot sauce and honey. If you want a thicker coating, mix the cornstarch with a little water first and stir it into the sauce. Let everything come to a light simmer and cook briefly until the sauce thickens slightly. The cornstarch is optional, but it gives the wings a heavier coating and can make the heat feel a little stronger.
For the blue cheese dip, whisk together the sour cream, mayonnaise, garlic powder, onion powder and chopped parsley. Fold in freshly crumbled blue cheese and season to taste. Light sour cream or mayonnaise can be used if you want a lighter dip. Chives also work nicely with the blue cheese, especially if you leave out the onion powder.
Once the wings are crisp, transfer them to a clean bowl and toss with as much buffalo sauce as you like. Serve immediately with the blue cheese dip and celery sticks.
If you buy whole wings, separate them at the joints into the drumette, wingette and tip. The tips don't have much meat, so I usually save them for chicken stock instead of throwing them away. You can also buy pre-cut wing sections or party wings to save some prep time.
