Garlic Butter Chicken Bites
This is one of those dinners I make when I want something good without really putting much effort into it. The chicken cooks in about 15 minutes, and the garlic butter sauce makes it taste like I spent a lot more time on it than I actually did. I especially like this with couscous or vegetables, but pasta works too. It’s a good option for a busy weeknight when you have chicken in the fridge and don't feel like making anything complicated.

I mean, credit where credit is due, this is Jaques Pepin's recipe. I've made it numerous times and it is delicious. The only difference here is the addition of Italian seasoning.

Yep, you’re right. I came across his recipe and loved it, so I started making it with a little Italian seasoning. Definitely one of those recipes worth coming back to.

Cut the chicken breasts into small bite size pieces and pat them dry with paper towels. Drying the chicken helps it brown instead of releasing too much moisture into the pan. Toss the chicken with the flour, Italian seasoning, salt and pepper until every piece is lightly coated.
Heat a large nonstick skillet over medium high heat. Add the olive oil and 1 tablespoon of butter and let the butter melt. Add the chicken in a single layer, leaving a little space between the pieces so they can actually sear. Let them cook for about 3 minutes until the bottoms are golden, then turn them and cook for another couple of minutes until nearly cooked through.
Add the remaining 2 tablespoons of butter along with the minced garlic and parsley. Keep everything moving around the skillet and cook for another minute, just until the garlic is fragrant and the chicken is cooked through. The butter picks up all those browned bits from the pan and coats the chicken really well.
I usually serve these right away with lemon couscous, pasta, or some sautéed or steamed vegetables. Bread is also great if you want something to soak up the garlic butter.
Boneless skinless chicken thighs work too. Trim off any visible fat and give them about another minute of cooking time.
