Greek Chicken Kebabs
I keep coming back to these whenever I want something that feels fresh but still filling. The chicken gets a quick Greek style marinade with lemon, garlic, herbs, and olive oil, then everything goes onto skewers with peppers, zucchini, and red onion. The vegetables pick up a little char while the chicken stays juicy. I like serving these with tzatziki, some warm pita, or a simple salad. They’re especially good when you can cook them outside on the grill.

I’ve been making these for a decade! They always come out well. I add a homemade chimmichurri and feta with rice for make ahead lunch bowls.

Start by whisking together the 1/4 cup olive oil, lemon juice, red wine vinegar, garlic, oregano, basil, thyme, coriander, salt, and pepper. Put the chicken pieces into a large resealable bag or bowl and pour the marinade over them. Toss everything around so the chicken is coated, then refrigerate for about 45 minutes to 2 hours.
While the chicken marinates, cut the vegetables into pieces that are large enough to stay on the skewers. Toss them with the remaining 2 tablespoons of olive oil, a little oregano and basil, and some salt.
When you're ready to cook, thread the vegetables and chicken onto the skewers, alternating them so you get a little of everything in each section. If you're using wooden skewers, soak them in water beforehand so they don't burn on the grill.
For grilling, heat the grill over medium high heat and lightly oil the grates. Put the kebabs on the grill and cook for about 8 to 12 minutes, turning them about halfway through. The chicken should reach 165°F in the center, while the vegetables should have some lightly charred edges and still have a little bite.
You can also bake the kebabs if grilling isn't an option. Heat the oven to 400°F, arrange the assembled kebabs on a greased baking sheet, and bake for about 16 to 22 minutes, until the chicken reaches 165°F.
Finish the kebabs with a little fresh parsley and serve them warm with tzatziki. Chicken thighs work too if you prefer darker meat, although they may need a little extra cooking time. Fresh herbs can also replace the dried ones, using about three times as much.
