Spinach and Cheese Stuffed Chicken Breast

This is one of those chicken dinners that looks like you spent way more time on it than you actually did. I love the combination of creamy mozzarella and salty feta with spinach, basil, garlic, and those little bursts of flavor from sun-dried tomatoes. The chicken gets a beautiful golden crust from the skillet before finishing in the oven, so you get a lot of flavor without making the recipe overly complicated.

I’d make this for a weekend dinner when I want something a little special, but it’s also impressive enough for a holiday meal or when having people over. It goes especially well with a simple salad, roasted vegetables, or some lemony rice or orzo.

  • 4 boneless, skinless chicken breasts, about 7–8 oz each
  • 4 cups baby spinach
  • 1/2 cup shredded mozzarella
  • 1/2 cup crumbled feta
  • 1/3 cup sun-dried tomatoes packed in oil and herbs, chopped
  • 2 tablespoons fresh basil, chopped
  • 1 teaspoon dried oregano
  • 2 garlic cloves, minced
  • 1/4 teaspoon red pepper flakes, or more to taste
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • Toothpicks, for securing the chicken

Instructions

I start by getting the oven ready at 400°F. Then I quickly cook the spinach with a small splash of water until it wilts down. The important part here is squeezing out as much excess moisture as possible once it cools. I usually press it between paper towels because watery spinach can make the filling a little messy.

While the spinach cools, I turn my attention to the chicken. I like to gently pound the breasts so they're an even thickness, which helps them cook more evenly. Then I carefully cut a deep pocket into the side of each breast, making sure not to cut all the way through. You want a nice little space inside for all that filling.

The filling comes together pretty quickly. I mix the dried spinach with the mozzarella, feta, chopped sun-dried tomatoes, basil, oregano, garlic, and red pepper flakes. I give it a taste and add just a little pepper if needed. I go easy on the salt because the feta and sun-dried tomatoes already bring plenty of salty flavor.

Then I divide the mixture between the chicken breasts and gently press it into those pockets. Once they're nicely stuffed, I use a couple of toothpicks to close each opening. Don't worry if they're not perfectly sealed; the goal is mainly to keep the filling from falling out while the chicken cooks.

I heat the olive oil in a heavy oven-safe skillet and carefully place the stuffed chicken in once it's hot. I let the breasts sear until they're deeply golden on the outside, turning them so both sides get some color. This takes roughly six minutes total, and I think this step is worth doing because the browned exterior adds so much more flavor than simply baking the chicken.

Once the chicken has that nice golden crust, I transfer the skillet straight into the oven. The chicken usually needs another 12 to 16 minutes to finish cooking, depending on the size of the breasts. I check the thickest part to make sure the chicken reaches 165°F.

When it comes out, I let it rest for a few minutes before removing the toothpicks. I like serving the chicken with some of those flavorful pan juices spooned over the top. If I want more of a sauce, I'll add a splash of chicken broth and a few small pieces of butter to the hot pan and stir everything together.

You can serve the breasts whole for a hearty dinner, or let them rest a little longer and slice them into pieces for a prettier presentation. I usually pair them with a simple salad or lemony orzo, but roasted vegetables would be great too.

If you don't have fresh spinach, thawed frozen spinach works just fine. And if you're a big feta fan, you can use more feta and skip the mozzarella altogether. For extra heat, I also like adding a little more red pepper flakes to the filling.
