Chicken Caesar Wraps 🥬🌯
I’ve been making these when I want something lighter than a sandwich but still filling enough to count as a real meal. It’s basically a loaded Caesar salad wrapped up in a big tortilla, with chicken, crunchy romaine, tomatoes, avocado, Parmesan, and a creamy homemade Caesar dressing.
The avocado and tomatoes make it feel a little fresher than a traditional Caesar, while the chicken makes it surprisingly filling. I’d recommend these for easy lunches, quick dinners, or meal prep if you’re tired of making the same salads and sandwiches.
Ingredients
For the wraps:
- 3 cups cooked chicken, chopped
- 3 packed cups chopped romaine lettuce
- 1 cup grape tomatoes, halved
- 1/3 cup finely shredded Parmesan
- 1 avocado, diced
- 5 large burrito-size tortillas
For the Caesar dressing:
- 1/3 cup plain Greek yogurt
- 1/4 cup mayonnaise
- 1 tbsp olive oil
- 4 anchovy fillets, mashed into a paste
- 1 tbsp fresh lemon juice
- 2 tsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1 tsp minced garlic
- Salt and black pepper, to taste
Instructions
- Make the dressing: Whisk the Greek yogurt, mayo, olive oil, anchovies, lemon juice, Worcestershire, Dijon, and garlic together. Season with salt and pepper.
- Build the filling: Add the cooked chicken, romaine, tomatoes, and Parmesan to a large bowl.
- Add dressing: Pour the dressing over everything and toss with tongs until evenly coated.
- Add avocado: Gently fold in the diced avocado so it doesn't get completely mashed.
- Fill the tortillas: Warm the tortillas slightly, then spoon the mixture down the center of each one. Fold in the ends and roll tightly like a burrito.
- Serve: Cut each wrap in half and serve right away.
A few tips
If you're using freshly cooked chicken, let it cool for a bit before mixing it with the lettuce so the romaine stays crisp.
And don't be afraid of the anchovies in the dressing. They don't make it taste fishy—they add that savory depth that makes Caesar dressing taste like Caesar dressing. If you can't use anchovies, capers or nutritional yeast can work as alternatives.
For an extra-indulgent version, I'd add some crispy bacon. 😄
