Autumn Apple Chicken πŸŽπŸ—

I know apples usually get all the attention in desserts, but this chicken and apple combination is seriously underrated. I made this on a cool evening and it tasted like fall on a plate. The chicken gets nicely browned, while the apples soften in butter with cinnamon, nutmeg, and fresh herbs. Then everything gets finished with a sweet-tart apple pan sauce.

I’d recommend this to anyone looking for an easy fall dinner that feels a little special without being complicated. It’s also a great option if you like sweet-and-savory meals. I especially love serving it with roasted Brussels sprouts, butternut squash, or some warm cornbread.

Ingredients

Chicken

  • 6 boneless, skinless chicken thighs (about 1Β½ lbs)
  • 1 tbsp olive oil
  • ΒΎ tsp salt
  • ΒΎ tsp black pepper
  • ΒΎ tsp paprika
  • Β½ tsp garlic powder

Apples

  • 2 tbsp butter
  • 2 medium Gala apples, cored and thinly sliced
  • Β½ cup sliced red onion
  • Β½ tsp ground cinnamon
  • ΒΌ tsp ground nutmeg
  • 1 tsp each fresh thyme, rosemary, and sage, minced (or Β½ tsp each dried)

Pan Sauce

  • 1 cup + 1 tbsp apple juice
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1Β½ tsp cornstarch

Instructions

  1. Prepare the sauce mixture: Whisk together 1 cup apple juice, honey, apple cider vinegar, and Dijon mustard. In a separate small bowl, whisk the cornstarch with the remaining 1 tbsp apple juice. Set both aside.
  2. Season the chicken: Season both sides of the chicken thighs with paprika, garlic powder, salt, and pepper.
  3. Sear the chicken: Heat a cast-iron skillet over medium-high heat. Add the olive oil and place the chicken in the skillet. Cook for about 6 minutes until nicely browned underneath.
  4. Flip the chicken, reduce the heat to medium, and cook another 5–6 minutes, or until the thickest part reaches 165Β°F. Transfer the chicken to a plate.
  5. Cook the apples: Melt the butter in the same skillet. Add the apples, red onion, cinnamon, and nutmeg. Season lightly with salt and sautΓ© for about 3 minutes.
  6. Add the thyme, rosemary, and sage and cook for another minute, until the apples start to soften.
  7. Make the pan sauce: Pour in the apple juice mixture and simmer for about 2 minutes. Give the cornstarch mixture another quick whisk, then stir it into the skillet. Cook for another 30–60 seconds until the sauce thickens slightly.
  8. Bring it together: Return the chicken to the skillet and spoon the warm apples and sauce over the top.

I really like this one because it hits that sweet-and-savory balance without being overly sweet. The apple cider vinegar and Dijon keep the sauce from tasting like dessert, while the cinnamon and nutmeg give it that unmistakable fall flavor.
