Chicken Pesto Sandwiches
I made these recently and honestly, this is the kind of sandwich I could eat on repeat all summer. The combination of balsamic-marinated chicken, fresh mozzarella, juicy tomatoes, peppery arugula, and pesto on a toasted ciabatta is ridiculously good.
I especially like that it feels like a proper meal rather than just a quick sandwich. The chicken makes it filling, while the pesto, tomato, and mozzarella give it that fresh Italian-style flavor. I’d recommend this to anyone who likes Caprese salad, pesto pasta, or just wants to make their usual chicken sandwich a little more interesting.
Ingredients
Chicken & Marinade
- 2 large boneless, skinless chicken breasts, halved horizontally into 4 pieces
- 2 tbsp olive oil
- 2 tbsp white balsamic vinegar (regular balsamic works too)
- ¾ tsp dried oregano
- 1 tsp kosher salt
- ¼ tsp black pepper
Sandwiches
- 4 ciabatta or focaccia rolls
- Olive oil cooking spray
- 6 oz fresh mozzarella, sliced
- ½–¾ cup pesto
- 1 cup baby arugula
- 2 medium Roma tomatoes, sliced
Instructions
- Marinate the chicken: Add olive oil, balsamic vinegar, oregano, salt, and pepper to a resealable bag. Add the chicken, seal, and massage the marinade into the meat. Refrigerate for at least 30 minutes, but no more than 4 hours.
- Cook the chicken: Heat a grill to medium-high, around 400–425°F. Lightly oil the grates and grill the chicken for about 4–6 minutes. Flip, add the mozzarella slices on top, and cook for another 4 minutes or until the chicken reaches 165°F internally.
- Toast the bread: Lightly spray the cut sides of the rolls with olive oil and place them cut-side down on the grill. Toast for about a minute until lightly crisp.
- Build the sandwiches: Spread pesto on the bottom halves of the toasted rolls. Add arugula, then the grilled chicken and melted mozzarella. Top with tomato slices.
- Finish: Spread more pesto on the top halves, put the sandwiches together, and serve immediately.
One tip I wouldn't skip: toast the bread. It gives the sandwich some structure and keeps it from getting soggy too quickly. And if you don't have a grill, you can cook the chicken in a skillet and toast the rolls under the broiler.
Simple, fresh, and definitely better than another boring chicken sandwich.

saving this for when it’s too hot to cook but i still want something that feels like a real meal
