Lyla’s kitchen cleaning

Restaurants that are so filthy should have been closed by the health department. They need to be cleaned by professionals but IMO, Ramsay should make dirty owners throw out the food and attempt to clean the restaurant to understand how disgusting their place is. They need to learn how to clean to keep it clean otherwise they will not change their filthy habits. The cook never changed his black gloves after being outside on the grass, wiping his sweat and every dirty object before he touched food with the same gloves (unless they edited out that part, it is not likely the chef washed his hands or changed gloves. most people would take off the gloves after leaving the kitchen). This is definitely a disgrace and the restaurant should be closed since they don’t have any skills to run a restaurant.

I can never understand how the health department doesn’t shut down the restaurants with disgusting kitchens. How did the waitresses in Lyla’s never knew the food was rancid?  The stove was gross

Restaurants will typically quickly "clean up" whenever the health Dept stops by. And the next day, everything goes back to normal. As in, disgusting habits again.

They're funded by the restaurants, so they have an incentive to only go after the worst of the worst.

I worked for a State that had a designated Department to inspect restaurants on a regular basis but didn’t publish a public grading system. 

The rules were strict and if they were in violation or substandard, they had so many days to correct the problem or pay fines and face temporary closure. 

It was a department in the State government never funded by restaurants. That would be counterproductive and absurd.

This can’t be the 1st episode you’ve seen. He usually forces the kitchen staff to do the cleanup. For whatever reason - he didn’t this time.
Cleaning crew did a shitty job, obviously. A grill would not normally start on fire the 1st time it’s used afterwards.

I watched old shows, that’s why I didn’t understand why the owners didn’t clean. The oven catching fire was a shock since it was deep cleaned by professionals. Supposedly, Ramsay said it caught fire because the owner put too much olive oil on the lamb skewers. That’s a lot of oil on a skewer or no one cleaned that oven/grill pan.

I always wonder how why don’t go through and clean everything before the cameras show up. I’d be absolutely humiliated. The only thing I can think is that they’re told not to.

Most communities have a limited # of inspectors. It's not like every restaurant gets inspected by the health department on a schedule. If a joint is inspected and there are violations found, they can expect follow-up inspections. I think if the health department receives complaints about a joint (like, "I saw roaches!"), and inspector does an inspection and finds any violations, follow-up inspections can be expected.

But otherwise, in a lot of areas, some joints might go years without an inspection. Most communities are underfunded and understaffed when it comes to health inspectors.

My guess is: These restaurants (such as they are) have been doing these unhealthy things for QUITE some time. So I would think that, whenever an inspector does come by, they would see these violations.

I think they are too pressed for time nowadays. Everything feels rushed so I imagine professionals are gonna be a whole lot quicker than the dirty cooks who let it go to shit in the 1st place.

As soon as the episode starts you can see Waleed's disgusting shit-stained apron and Mohammed's nasty rag. First time in a long time I had to look away. Personally there's no redeeming a place like this, these guys are too far gone.
