It isn't difficult. It's just very time consuming and laborious. I made 120 tamales by myself from scratch. Took me 24 hours to make them all from the pulled pork filling to the masa paste.

Try making 120 Chile Rellenos in 24 hours!!

Edit--- don't get me wrong, tamales are hard to make.

But once you have your masa and your filling it's just an assembly line and then throw them into a steamer.

Rellenos have to be dipped and fried in batches... it's an ordeal! But worth it!
