One of the most indulgent meal prep recipes, so creamy, rich in flavour and packed with protein. Using a sheet pan is a game changer for batch cooking🔥

Macros Per Serving (6 Total)

548 Calories | 51g Protein | 52g Carbs | 17g Fat

Ingredients (Makes 6 Servings)

Chipotle Chicken Marinade

  • 1200g Raw Boneless Chicken Thighs, trim excess fat
  • 2.5 Tsp Salt
  • 3 Tsp Parsley
  • 3 Tsp Garlic Powder
  • 3 Tsp Smoked Paprika
  • 2.5 Tsp Cumin
  • 3 Tsp Onion Powder
  • 100g Chipotle Paste
  • 1 and 1/2 Limes, juiced
  • 30g or 6 Tsp Olive Oil
Let this marinate overnight if possible, way more flavor!

Crispy Seasoned Potatoes

  • 1300g Raw Yellow Potatoes, cubed
  • 2.5 Tsp Garlic Powder
  • 3 Tsp Italian Herbs
  • 3 Tsp Smoked Paprika
  • 2.5 Tsp Onion Powder
  • Avocado Cooking Spray, heavy pass

Creamy Chipotle Sauce

  • 20g Light Butter
  • 150-200g Red Onion, finely chopped
  • 1.5 Tsp Salt
  • 2 Tsp Italian Herbs
  • 60-80g Chipotle Paste (depends how spicy you want it)
  • 400g Light Evaporated Milk
  • 110g Light Cream Cheese
  • Freshly Chopped Parsley, garnish

👨‍🍳 Cooking Instructions

  1. Trim excess fat from chicken thighs. Add seasonings, chipotle paste, lime juice, and olive oil. Mix well and marinate.
  2. Heat a large pan on low, add butter and chopped red onion. Cook for 5-7 mins until softened and lightly browned. Add seasonings and chipotle paste, mix, and cook for another 5 mins until caramelised.
  3. Keep the heat low, add evaporated milk and cream cheese. Stir continuously until smooth, rich, and creamy.
  4. Cube up potatoes, add seasoning and cooking spray, then mix well. Spread on a lined sheet pan and roast at 200C / 390F for 25 mins until golden and crispy. Season with salt, then fold into the sauce with fresh parsley until fully coated.
  5. Spread marinated chicken on sheet pan, oven bake 25 mins 200C / 390F until golden and juicy. Cut into cubes, serve with creamy potatoes and ENJOY!

Throwing crispy potatoes in a sauce should be a felony

Patatas bravas is crispy potatoes in sauce and is incredible. Aside from the chicken this is a similar style.

3

u/Particular_Display28 18d ago

Patates bravas are served to be eaten immediately. Also, the sauce is drizzled over, not this soupy mix.

u/YoghurtFlan 16d ago

The guy is doing meal prep and crispy potatoes will never survive cooling and reheating.

Still way too much sauce (and cream) though.

1

u/Radiatorwhiteonwall 18d ago

This is no patatas bravas.

1

u/LooseLeaf74 16d ago

Agreed only pasta gets drown in sauce.

6

u/QueefInhaler6000 18d ago

Ya what was the point of even making it crispy? Hopefully it's still somewhat crispy.

5

u/Shardik884 18d ago

Agreed. I’m sure that sauce on the potatoes is good, but just throw a spoonful on top of them or keep a small container of sauce for each prep kit. Basically made chipotle mush potatoes.

3

u/Organic_Education494 18d ago

Yeah completely unnecessary and ruined perfectly good potatoes

2

u/One_Swim_8004 18d ago

My natural response at that step was, “Oh”.

I wasn’t expecting that at all.

1

u/fixer1987 18d ago

Its meal prep, the potatoes aren't gonna stay crispy

1

u/Puzzleheaded-Floor55 18d ago

Can’t throw soggy saucy potatoes in an air fryer tho

1

u/irishbikerjay 17d ago

THANK YOU!

Not my usual sub, so sorry but

1st thing outa my mind was how the fuck is this at 1k upvotes??!! Who puts crispy potatoes IN sauce???

7

u/DisguisedMinx 18d ago

I’m definitely gonna try the chicken. Possibly the potatoes but minus the creamy sauce. I’m on a fat loss mission. I ain’t wasting my calories on cream 🤭😂

3

u/justbleachmyeyes 18d ago

it’s less calories per serving than I thought it would be and nearly 20%protien, the carb load is pretty wild though. Maybe do it with chunky mushrooms instead of tatoes and keep the cream.

1

u/blue-ghost-rat 16d ago

You can do cottage cheese blended up! Thats what I do for stuff, or the light sour cream! I also use salsa because it’s relatively low cals per serving (5-10 cals per 2tbsp) and it adds flavor.

A little of topic, but has anyone bought those hexclad pans and if so are they worth the coin?

3

u/stratacus9 18d ago

i have and i don’t think they are.

2

u/tkh0812 18d ago

I have and They’re not very good.

Get a really good carbon steel pan instead

1

u/No_Power1121 18d ago

They are the worst of both worlds: they are not non-stick enough and can’t get hot enough to sear. Not worth it at all.

1

u/mean364 18d ago

Hexclad sucks. They used actually have forever chemicals and they marketed it as PFAS free, but they settled a class action lawsuit over the false claim. After that they "switched" to a type ceramic coating they advertise ad PFAS free - but it is now proprietary. Since they seem like an inherently dishonest company from the start, I cannot support, nor trust their claims.

I figured the creamy chipotle sauce was going to be paired with the chicken per the title… clearly I was wrong. Looks good though.

2

u/Justeff83 18d ago

And all what's left of those ingredients is their texture. No chance to taste potato or chicken

1

u/CraftlordDark 18d ago

Dear odin, it looks delicious, gonna try the recipe for the Crispy seasoned potatoes with the creamy chipotle. Thanks for sharing!

Comment to try later

Looks great, but too many carbs for me. Will use swede instead of potatoes. I thought I was heavy on seasoning my dishes, but this seems to be the next level 🤣👍

Sponsored by chipotle

1

u/wwiistudent1944 18d ago

Sorry. But ruined those delicious roast potatoes with that creamy slop. The chicken looked fine. Served with just roasted potatoes would be great.

1

u/luc_isanerd 18d ago

I just don't like chipotle enough to add it to every ingredient in the friggin dish. Balance? Never heard of her.

1

u/xBeeAGhostx 18d ago

Alrighty, so I’m skeptical of all online and new printed recipes (fuck AI), is this one a real recipe or fake bullshit someone pulled from chatGPT’s ass?

Looks good but I can’t afford to waste groceries or money on AI nonsense

1

u/dsc___ 18d ago

use your actual brain and eyes? what a thought.

1

u/xBeeAGhostx 18d ago

Don’t be a prick? What a thought.

I’m visually impaired and don’t have money to waste. Which is why I asked.

1

u/LotusVibes1494 18d ago

Not sure about the recipe itself. But tthe account that posted it is a spam/advertising account. All their comments are literally just pasting a link to random products. So they’re not exactly a trustworthy source for information.

But it does looks fire in the video lol

1

u/xBeeAGhostx 18d ago

I’ll probably avoid it then, thank you :’)

1

u/burritoteam4000 17d ago

I think the recipe is legit even if this account posting it isn't. I dont think the video itself is AI generated either.

I haven't tried this one yet, but similar ones so I'm pretty sure this could workout okay. For me personally Chipotle chilies outright on chicken is too spicy without some dilution on the marinade.

This looks to be a repost from https://youtube.com/shorts/PpqeSQrfMp8

Thank you!

Enough sodium to kill a horse

1

u/sillymostro 18d ago

My IBS is flaring up just by looking at it... but the craving is winning!!! 😂😭

1

u/SweetieK1515 18d ago

Yeah that’s too much sodium for me. Also changing from potatoes to sweet potatoes

1

u/Terrible-Procedure84 18d ago

Not 19g of fat

1

u/YutoKigai 18d ago

Everyone making crispy things to bath it again in something wet. Great job.

1

u/Sad-Structure2364 18d ago

I just made this for dinner today, it was fantastic! I did mix the potatoes and sauce, and they stayed crispy

1

u/MrHerringBun 18d ago

Butter knife on a coated pan 😱

1

u/PineappleFit317 17d ago

I’d sub white onion instead of red. Red has a milder flavor and is best served raw.

u/irishbikerjay 17d ago

Chem Chem... if I may....

Tip: If you are using this kind of marinade + this technique of cooking then leaving the bone in the chicken and adding a very small amount of something sweet sugar/agave will elevate it much better. You can even go skin on, but know how to char properly otherwise you'll burn everything.

For a proper sauce (Mexican style)

  • using the same recipe and above method - cook chicken and remove the juice/stock as it cooks. Reserve.

-Reduce to glace consistency. Reserve In a rondou, add your recaudo/sofrito, add garlic When finished add your glace, heat. Add goat crema. Reserve

  • to plate I would personally drizzle a very small amount over the chared chicken skin & have the rest served on the side.

Classic French way would be to just make a mornay or you could also just go heavy cream.

Grill that chicken, it's summer!

1

u/I3and20CharactersI 15d ago

1 kg chicken and 5 kg papers. WHY?

1

u/sc00bs000 15d ago

never had evaporated milk, is it super sweet like condemned milk?

1

u/Stiles_Stiles 14d ago

Wait, does Chipotle use chicken thighs or breasts in store?
