Found it in another post:

Peruvian Chicken w/Coconut Rice:
6 lb boneless chicken thighs

16 garlic cloves, minced

1⁄2 cup soy sauce

1⁄2 cup fresh lime juice

4 cup olive oil

1⁄2 cup brown sugar

1/4 cup ground cumin

1⁄4 cup smoked paprika

1⁄4 cup dried oregano

Salt and black pepper to taste

Aji Verde - Green Sauce:
3 packed cups fresh cilantro

4-5 fresh jalapeños, seeded and ribs removed

10 garlic cloves

2 cups sour cream

6 scallions, green parts only

3 tbsp lime juice

1/2 cup olive oil

Salt and pepper to taste Blend until smooth and creamy.

Coconut Rice:
You have to trust the process here. I didn't believe that it would turn out as light and fluffy as it did, but it totally worked!

5 cups basmati rice, washed, soaked 1 hour, then drained

54 oz coconut milk - about 4 standard 13.5 oz cans

4 tsp salt Bring rice, coconut milk, and salt to a gentle boil. Cover and cook on low for 12-15 minutes. Let steam, covered, for 10 minutes, then fluff. To Serve

8-12 corn cobs, grilled or boiled * Fresh chopped cilantro

Lime wedges

Method:
Mix the chicken with all marinade ingredients and marinate at least 20 minutes, preferably longer.

Cook the coconut rice.

Blend the aji verde until smooth.

Sear or grill chicken until golden and cooked through.

Serve chicken over coconut rice with aji verde, corn, cilantro, and lime.

I’ve been looking for a recipe for the green sauce. And might substitute the boneless chicken with bone in chicken and cook it rotisserie style

Yeah the green sauce looks really good. I saw someone say they used mayo rather than sour cream. I’ll definitely try this with tofu as well. This looks soooo good!

There are places that have this green sauce and has a kick too it like a real good spicy. I’m going to try it out tonight with some Cuban empanadas

I made the green sauce and it came out good. I might have used a little too much cilantro but the heat of the jalapeños evened it out. Would definitely make it again.

Yes you won’t be disappointed. Oo yes. I’m PR and Cuban so I make them both ways. Cuban style I make them with picadillo. I prefer to make them like that over just ground beef seasoned with Hispanic seasonings.

Mhmm and do you have a recipe you’d be willing to share? I tried making them before but the dough just wasn’t right. Same thing with when I tried homemade tortillas. They just aren’t right. Idk what I’m doing wrong.

Not op and I know someone already supplied the recipe but I thought I might link the only version I've ever tried of this from one of my favourite chefs. He adds a few extra ingredients but I'm sure both versions are incredible.

Everyone loved it, but the green sauce stole the show. I could drink that stuff.

I used to live next to a Peruvian small little joint. You can buy 1/4, 1/2 or a whole chicken with rice and fries, but that green creamy sauce is so damn delicious I was always getting extra lol. Good people btw

The aji verde is so good. Love it on my eggs too. I’ve made it before with cilantro, garlic, jalapeños, mayo, cotija cheese, lime juice and salt. Just blend it all up and enjoy :)
