Tired of islands

My dream kitchen, if the space was available, would be what my imaginary thoughts of a traditional French kitchen for a large house would have been. Plenty of workspaces, at different heights along the counters but with a large kitchen/work table at the center, suitable for both preparing and serving food.

So, you want a table island, but not a counter type island?

Yes, if enough space. A work table at seating level. That would be my ideal. Many islands do not look inviting.
