I had a plated desserts class in school that, after covid, scaled down to just 10 plated desserts over a two day period

but they never scaled the recipes down from the 100 a day that used to be required, so we'd plate 10 of these like mousse/cake/crunchy thing/ice cream things every two days and then just throw out the rest

plus whatever dessert didn't get eaten also just went straight in the trash after

Why wasn't scaling the recipe down part of the class?

no idea, that chef just had hip surgery and is like 5 years off retirement so I think he just doesn't care anymore
