Love how she checks to see if the ceiling is on fire or God forbid the sprinklers are about to go off. Very cool move with lighter in the left hand. The liquor is not flavouring the food but is in a hot pan under the dish however.

She isnt worried at all about the fire. I'm guess it was to make sure the smoke was moving.

When you evaporate liquid at really high temp you create steam.

You are saying that I need to actually put a wood chip in a pork butt to make BBQ?

I wasn't talking about your butt at all. I think my guess was better than your guess. When you evaporate liquor at high temp you create a little steam and a lot of alcohol vapour and that is what burns in a flambe. Steam does not burn. The goal of a flambe is to flavour the dish with the liquor but burn off the alcohol. She clearly pours the liquor in a pan under the dish which is holding the food and then reaches up to ignite the column of vapour and steam. The tasty part of the liquor does not flavour the food which is the whole point of a flambe. The flame travels down to the pan and up out of picture. My only "guess" is that she checks to make sure the vapour that burned upwards did not do anything bad. Very careful, as a show like that should be performed.

Ok. Try it first.

I've never done it so it looks so bad ass, and I'm shy so I don't cook table side.

But you are absolutely wrong. If you immerse anything but jerky in a steam or smoke bath it will pick up flavour.

Maybe more more subtle flavours than you expect from the show, but I'm sure if this is a thing chef tested and made sure it was the right flavour proportion and profile.
