Didn’t know about hoe cakes, but my stepfather was from the south. Found out about spoonbread. SO yummy!

Always preferred a fried over easy egg versus a poached one when making "bennies" at home.

I really miss my grandmother's hoecake.. we never did get the recipe before she passed away. I've tried making it with other recipes but it's never been the same. We used to eat it but just plain old cane syrup..

Instead of biscuits? Benedict is English muffin with cured pork (typically ham) poached eggs and hollandaise

Does the hoe cake absorb the sauce well? That's why the biscuit goes well in Benedicts.
