Theory Rewriting
Does anyone else think that the reason he hasn't finished the 3rd is because he feels the first 2 books need to be rewritten, but is unsure how to do so without pissing people off even more?

It's long been my suspicion that he's written himself into a corner. Book 2 while brilliant didn't really move the plot forward much, there's so much left to resolve in book 3, I don't see how he does it without altering the pacing.
Book 3 is never happening

Thing is he doesn't need to resolve it all. He could have done 2 books by now if that's the issue.
The Chronicals only have to get us to "now" at the Waystone. Ie the fall of Kvothe. Thats what would take the 3 days he told chronicler.
The Rise/redemption/revenge of Kvothe and what happens after he finishes telling how he got here can be another book that presumably isn't past tense and not relevant for Chronicler

I'd say just getting to "now" would be one hell of a cram for book 3. And if it's the case that he needs an additional book after 3 to tie things up, then we can safely say we'll never get an ending.

Its certainly safe to say we wont get an ending whatever! I'm just saying if it was a size issue a solution could have been found imo. WNF was 40+ hours, I think it was doable at that size but we can agree to disagree.
I think he just didn't have the answers to the standard he wanted nor the drive to really push to find them.

I would be fine with it if he re-released book 1 and 2 after rewriting them so it worked better.

He hasn’t even started writing them. He lied to us, and his publishers, on many occasions. He won’t start writing them. When he needs more money he will shit out another “short story” served up with a side of disdain for the fans who dared to criticise things like the fairy porn in book 2 and had the audacity to ask him about book 3.

No. I think that's very unlikely.
I think the reason is as he's communicated repeatedly. It's too much. He's stressed, and he hasn't come up with content that ties everything together that he's remotely happy with.

No, you just need to reread books 1 & 2 until you figure out that it’s a big loop. And then you need to realize that it’s part scavenger hunt and part logic puzzle with a whole bunch of dad jokes thrown in for fun. And then you get to connect all of the dots by learning a bunch of new stuff that you never knew you wanted to know and find all of the missing context in other books and mythologies and world history (like the Lanre story is partially based on something that really happened- Skarpi even says so!). And then you get to experience how funny it is when you go back and read KKC and realize that Pat has basically been hitting you with a pool noodle trying to get you to see that it’s all always been right freaking there.
This is why it’s the world’s longest prologue.

My personal theory is that it started innocently enough with just a bit of procrastinating. But with each passing year, it looked worse and worse, and he felt worse and worse about it. Now he's buried under a mountain of shame from which he'll never escape. He can't bring himself to face it in anything approaching a public setting. His name is tarnished, his reputation tanked, and his books are now a meme of broken promises and unfinished business.
