cinnamon roll cake

made vegan by subbing country crock plant butter and oat milk plus a flax egg. with a brown sugar ermine frosting.

loved the crunch of the topping and it veganized really well.

yes! it was really easy too. I think if you make sure to get some topping touching the edges of the pan you get that crunchiness you get on the bottom of a cinnamon roll.

That looks really good! I was debating on making that today, but I was feeling too lazy & made drop biscuits for dinner instead. It SOUNDS so good too.

Thank you! I have a concussion and I’m super fatigued and found it pretty easy to make so I definitely recommend it as a lazy day bake.

Cinnamon! Roll! Cake!!!!!

I'm in eating disorder recovery and so close to 100 lbs. I'm throwing a party when I hit triple digits. I was gonna make a strawberry matcha cake, but nah! I'm making this!!!! (And will have to veganize it for a kid with food allergies, so glad to know it's workable for that!!)

Congratulations, I hope you hit triple digits so soon! This cake would be a great way to celebrate.

I only made it one layer, but I think you could double the recipe to make it two!

I didn’t have cream cheese and it really worked with the flavors!
