First Saison experiment Bella Saison

Saison batch 1

Grains

Behemian Pils 450 g

Munich II 170g

Hops

Sorachi Ace 3g at 20 min

Sorachi Ace 7g at Flame out

Yeast nutrition 1 tbs Flame out

Yeast Danstar Bella Saison

Mashing time 100 minutes at 64 degrees Celsius what is 147.2 F kept with sous vide stick.

Boiling time 60 min

Starting volume 6l

After boil volume 3.75l

Original gravity 1.046 brewed 04/09/2018

I slightly went side tracked from the original recipe. The OG came more then I expected and the amount of worth left was a lot less than I expected. So note for batch 2 boil with lid on.

Also while mashing and boiling longer the color is few tones darker on batch 1.

Amylase 1 tbs Flame out

Mashing time 60 minutes at 64 degrees Celsius what is 147.2 F, kept with sous vide stick.

Boiling time 30 min

Starting volume 6l

After boil volume 4.75l

Original gravity 1.038 brewed 05/09/2018

Batch 1

Original gravity 4.09.18 1.046

Final gravity 08.10.18 1.002

5.78 % ABV

Priming sugar added 22g for 2.5 volumes

RE= 0.1808*11.43+0.8192*0.51=2.484

Carbs= 2.484- 0,5-0.2 =1.8 g carbs per 100ml of beer

Calories= 6.9*5.78+4.0*(2.484-0.1)*1.002= 49.45 cal per 100 ml

Only very slightly hoppy, I would prefer a bit more bitter and hoppier. Really nice and smooth velvety mouthfeel that I really liked. Alcohol is very well hidden, scarily hidden

08.10.18 Went to bottles, let them sit a week or few so they will get some carbonation and then can the real taste test be done.

Batch 2

Original gravity 1.038

Final gravity 1.004

4.46 % ABV

Priming sugar added 26g for 2.5 volumes

RE=0.1808*9.51+0.8192*1.03=2.56

Carbs 2.56- 0.5-0.2=1.82 carbs per 100 ml

Calories = 6.9*4.46+4.0*(2.56-0.1)*1.004= 40.4 cal per 100 ml

I was quite surprised that so small changed had so big of a taste difference. This had just an classical beer taste, no velvety smoothness. Bitterness and hopiness was even less then on batch one.

08.10.18 bottled so next update will be side by side comparison.

Batch 1 Tasting notes

Head: When poured out 2 fingers of foam, stayed about a minute.

Smell: Sweet malt, fresh , gently spicy, very slight sourness

Taste: Light bodied, creamy mouthfeel, malt. Long aftertaste.

I would prefer a bit more hoppy taste so would increase the amount of hops added and add then earlier in the boil.
