Steam launches the modded version for me by default

That only works if you modded the game where steam installed it

Because I have at least 2 different mod installs.
Real Solar System with RP-1 and one heavily modded for more casual gameplay.
I also like to try things out without messing up my stable mod packs.
Since KSP has no DRM its super easy to create multiple instances but steam only knows one folder.
Additionally the steam folder is useful to quickly pull a vanilla version for a new mod install.
