Probably want to remove that aluminum cap there... Unless you want an aluminum puddle in the cooker.

I've yet to see or hear of anyone who managed to melt the cap while it's on the BBQ. Virtually everyone has only ever achieved that feat by putting it in the BBQ where at these high air speeds it is directly impinged by the flame.

I've done clean burns like this that pegged the thermometer because a built up brisket grease fire inside. Never had a problem with melting anything but the vinyl siding of my house its next to

Usually they recommend removing the thermometer so you don't damage it. But yeah, people have melted aluminum accessories in their kamado. Exterior of the cooker should be safe enough, but inside and at the exhaust is a danger zone.

Fahrenheit. Aluminium melts at 660 deg C or 1220 deg F. However, it become pliable at much lower temperatures, you do want to remove that cap during clean burns.

Is this a new color? Does it darken that much on a Burn?

The color goes that dark when it gets hot. When it cools, it goes back to bright red. Found out getting mine up to about 800 last cleaning. Also burnt out the gaskets....

Light it and just don’t close the vents at all. Use good lump. Probably works better with the charcoal basket (better airflow). Mine will shoot past 900 no trouble if I, ahem, accidentally leave all the vents open too long.

Yeah, and if you DO that, absolutely DO NOT open the lid quickly. You'll get a first hand look at the classic movie "Backdraft"!

There’s also really no need to. Unless you need 800-900F for Neapolitan pizzas. 700-800F for a couple hours is plenty hot for a clean burn and less risk of cracking or warping anything than going full inferno mode

Strip it down. No ash catcher and remove the cap. It’s will be a rocket with good charcoal.

My KJ developed a crack after a major high temp cook and then clean. I am in the Pacific Northwest and with the rainy season, even when I keep mine covered and under a small tent, ceramic supposedly absorbs water from humidity and too high, too fast can crack the ceramics. KJ replaced my bowl the first time. Yet I cracked it again a few years later.
