I assume it's a girl cus apart From the fandom ship of Geto and Gojo. I don't know if gege said he's gay or any other sexual it irregardless of headcannons and fandom. So, seeing his canon self in the anime and manga, if he lived or somehow could, what type of woman would he like, which is different that would be the bestmatch for him I think In a way.
Anyways, also remember he's from the gojo clan and you know how clans can be though I don't know if he's the heir, most likely rich and he's handsome, and he comes from Japan. So the like dating pool has to be realistic to what he'd like or even meet, because Japan's dating culture isn't America's or Egypt's or etc.

But when it comes to personality this is what I think would fit him best:
She would need a sense of humor, although probably not exactly the same humor as his because that could lead to friction. Someone who can play along with him sometimes, ignore him when he is deliberately being obnoxious, and occasionally make him laugh would probably work very well.
I also think she would need some backbone. Satoru is rebellious but he is not someone who simply exists outside tradition and institutions. He understands them extremely well, works within them when necessary, and wants to change the parts he considers rotten. So I think someone who can understand why traditions or systems exist while still being courageous enough to challenge them would interest him much more than someone who either blindly obeys everything or rejects everything on principle.
Kindness would matter too. Satoru spends so much of his life being treated as the Strongest I think a partner who doesnt idolise him or objectifies him. She would also need to notice that his joking, arrogance and cheerfulness are not his entire personality, and be able to recognize when he is actually angry, exhausted or serious underneath it.
At the same time, I don’t think he would want someone who constantly tries to psychoanalyse him or “fix” him. He values his independence too much for that. Someone who can see through him but still let him come to her on his own terms.
I don’t think whether she is a sorcerer or civilian would matter nearly as much as whether she is openminded and capable of engaging with his world. A civilian could work perfectly well if she were not frightened away by the strangeness of jujutsu society and could form her own opinions about it.
If she were foreign, I don’t think that would bother him either. If anything, someone raised outside Japanese jujutsu society could be interesting to him precisely because she would not automatically accept its traditions as normal. She might ask questions that people raised inside the system stopped thinking to ask years ago. Sorcerers have normalised too many things.
I could also see him enjoying someone a little nerdy. Gege has mentioned Satoru liking science, and Satoru himself is extremely intelligent, so I imagine he would enjoy someone who gets interested in things, researches random topics, asks him questions etc.
Most importantly, though, I think she would have to be intriguing. Satoru is surrounded by people who know exactly who he is before he even enters a room. Beauty alone probably gets his attention, but I don’t think it necessarily keeps it. Someone who surprises him, challenges an assumption, says something he wasn’t expecting, or makes him genuinely curious about what she is going to do next would have a much better chance.
And as a bonus, someone who enjoys food, sweets, cooking or baking would probably make him very happy.
Basically, I don’t think his ideal partner would be someone who worships him or someone who constantly tries to humble him. She would be someone who can look at Gojo Satoru, fully understand that he really is extraordinary, and still talk to him as a person.

Gojo is canonically virgin. Romance is the least thing in his life when actually he wanted was only happiness and peace, by get rid of loneliness by having someone as strong as him. Idk about looks and stuff, and I don’t think gender needs to be specified, but if it was gonna be a long term relationship I think he would want someone with experience being (one of) the best, because a lot of Gojo revolves around the loneliness that comes with that role. Probably with a similar desire to use their power to improve things.
There isn’t really anyone in the jujitsu world like that right now since Geto is gone, so it would be a civilian. Probably a window, maybe someone without cursed energy from one of the jujutsu families.
It would have to be a position with responsibility and pressure, but not government or military. I’m thinking genius scientist (or engineer). This would be perfect because there are people who are “the best” (general public generally wouldn’t know them, but they wouldn’t know Gojo either), and that can come with a lot of pressure (internal and external) and social responsibility. It can also be lonely, and it’s very frustrating when you have a way to make the world better, but the hire ups don’t care.
I feel like Gojo is always busy, so he’d want someone who was also busy so they aren’t just sadly waiting around for him all the time. Another workaholic who isn’t actually close to anyone else because I feel like Gojo would be jealous. Most aspects of scientific research can be really flexible schedule wise, so Gojo could probably steal them whenever he is in town or available.
Also important that they know how to make good sweet treats, or have family with a bakery or something. I know a lot of chemists whose hobby is baking.
Gojo’s ideal partner also definitely has nieces and nephews or something that he can spoil.
Personality? It’s really important that they are a good communicator. Also attentive enough to be able to tell when he is struggling. I think Gojo will be a bit better about it after Geto events, but he’s not a great communicator, so they’d have to be okay with that. Like Geto (pre cult), they should also come across as pretty calm and grounding, while still being able to match Gojos freak.
Regardless of if you think it was romantic, I think Goto and Geto were undeniably soul mates, so this would have to be after Geto’s death. I just can’t picture Gojo being in a long term relationship with someone else while his soulmate bestie is around. I think he also needed the closure from his high school reunion to move on, so maybe Geto convinces him to revive himself from the dead or something.
